Veggies on the Grill
I've learned the secret to getting my family to eat vegetables, the grill!
My family is pretty good about eating most vegetables, but they do balk at some, like zucchini. The other night I was making lamb burgers on the grill. (Our lamb is excellent by the way.) I had onions and zucchini to use from the garden. Since I was already using the grill, I decided just to grill the veggies too.
I sliced them and marinated in Italian dressing for about twenty minutes. Then I put them on the hot grill to cook, and served them with our burgers.
The kids still didn't rave over the zucchini, but they did like it better grilled than other ways I've prepared it. Tim and I raved over the grilled zucchini. What was surprising was the onions. The kids loved them. They were fighting over them.
A few nights later I found myself with a little of this and a little of that in the vegetable drawer. To the grill again! This time the mix included zucchini, onions, tomatoes, and cauliflower. I really didn't care for the tomatoes sliced and grilled, but the big surprise in this mix was the cauliflower. Tim, who previously did not like cauliflower in any form, said, "I didn't know cauliflower could taste good."
Needless to say our grill will be seeing a lot of vegetables this summer!

I like to grill veggies when I make shishkabobs, but I rarely grill them any other time. I need to make it a point to do that more. Sounds yummy!

That zucchini looks amazing! I'll be trying that the next time our neighbor "dumps" some on us. ;-)
It all sounds so wonderful, but I am especially excited about the cauliflower idea. I just love cauliflower and have never thought of doing it like this. I;ll definitely be trying this soon. Thanks so much.
Zucchini, corn, mushrooms on the grill! YUM!!! I haven't tried pineapple slices yet, but was told that was excellent as a dessert.
How long would you grill the sliced zucchinis? And the onions, do they need to be sliced too?

It really depends on the thickness of the slices and the heat of the grill. I cut mine about 1/4" and grilled them for roughly 10 minutes on each side.
I sliced some onions, but also used some green onions whole. I liked the sliced ones better, but both were good.
