Roasting Corn on the Grill

The corn in the garden is ready! I love it! I'm hoping to freeze some, but currently we are eating it about as fast as it is ready, and we planted a lot of corn! My mom said to me the other day that we might need to double our garden size. Ugh! I can barely keep up with what we have!

The corn is delicious. Corn can be fixed a number of ways, but my favorite is roasting it on the grill. The taste is wonderful, and by using the grill you don't heat up the kitchen. Frugal and delicious, just my style!



There also several ways to roast corn on the grill, but this how we do it.

1. Preheat the grill on medium heat.
2. Pull off just the outside layer of the husk. You don't want any of the husk to be able to hang into the fire.
3. Pull off the dead silk.
4. Place directly on the grill and turn frequently.**
5. Roast for about 40 minutes. The time will depend on how hot the grill is and how big the ears are. You can pull back a bit of the husk to check if needed.

**If you are using corn straight from your garden soaking in water is not necessary. If you are using corn that was picked a few days ago, you will want to soak the ears in water for about 20 minutes. This will keep the husks moist and prevent them from catching on fire.

Removing the husks and silk is easy after the ears are roasted, but be careful, it will be hot. Roll the ears in butter and sprinkle with salt and pepper. This time of year we can make a whole meal out of roasted corn, sliced tomatoes, and maybe some green beans. It feels good to make a meal with just items from our garden! Your grilled corn looks so good!

My brother says we have to try his recipe, take the silks out but don't remove the husks, drizzle honey on the corn, wrap it back up and then grill. Heaven!
