Canning Tomato Soup

When the tomatoes started getting ripe, I started to think about the different tomato products that we use. Three main things we use are sauce, diced tomatoes with peppers, and tomato soup, and that is what I decided to can from the tomatoes in our garden.

One of our favorite winter lunches is tomato soup with grilled cheese sandwiches. It is a great warm up on a cold day. We eat it at least once a week in the winter.

I've never made tomato soup from scratch, let alone canned it, but I found a recipe in my vintage cook book, and thought it was worth a try. (I adapted the recipe slightly.)

Home Canned Tomato Soup

1 peck ripe tomatoes (about 8 quarts)
4 onion sliced
12 sprigs parsley
2 bay leaves
1 tsp peppercorns
1 tsp celery seed
1 tsp cloves
2 TB salt
1 TB sugar

Wipe tomatoes and quarter. Tie spices in a bag. Combine all ingredients and heat very slowly; simmer for 1/2 hour. (You may want to simmer longer if you want a thick soup.) Strain, reheat and bring to the boiling point. Pour into sterilized air-tight jars leaving 1/2 inch head space. Process in boiling water bath; 40 minutes for quarts.
The recipe yielded 3 1/2 quart plus one good sized bowl for my lunch. Oh, it was so good! I do not want to eat the soup out of the can again. Though I will need to make a much larger batch next time if I am going to have enough for winter.

Did you just use a boiling water bath or use a canner? I'm scared to death of water processing! I think I'd feel safter doing it if I ever actually SAW someone do it!

I used boiling water. I've done tomatoes in the pressure cooker too. Just kind of depends what I feel like that day! :) Maybe next time I use the pressure cooker you can come help. :) Probably involve snapping beans though.

I always use fresh tomatoes.
The guy at the market knows it, so he keeps the ones that got a bump apart and sells them half prize to me.
He's happy and I'm happy.

With 6 hungry kids and friends one never has enough.

In case I've made too much, I freeze it.

I have a great crop of tomatoes this year--not sure I'm ready for canning again. I tried it with something (can't even remember what!) in the past and hated the heat. :) The soup sounds really yummy, though. Maybe I can just come over and have some of yours.

I haven't really tried canning before...but then there isn't that much produce to be able to can, to start with.
But the idea is so great, I might just try it...when we have the supply. I'll need a lot of tips though, as a first timer.

We have an abundance of tomatoes this year and the tomato soup sounds wonderful. I'm going to do it today! And guess what? There are still lots of us canning still, because it just tastes better! Lots of kinds of pickles, tomatoes, fruit, jams and jellies, - and homemade apple juice from crabapples (always lots of those!) Canning isn't hard and there are books available on canning and freezing!
