Blackberry Freezer Jam
Yesterday morning I went out picking again. I love to go first thing in the morning. I get up early and go before Tim has to go to work. I'll go out just me, the dog and the wildlife. Time alone and peace and quiet are hard to come by around here. It is worth getting up for.
I decided to try Blackberry Freezer Jam with the day's harvest. I've made strawberry freezer jam before, but never blackberry. Freezer jam is faster to prepare, and I think keeps more of the fresh taste than cooked jam. It does set softer, and of course requires space in the freezer. The recipe was in the Sure-Jell box.
3 pints blackberries (6 cups)
5 1/4 C sugar
1 box Sure-Jell
Mash berries with a potato masher one cup at a time. Add sugar to crushed fruit. Stir and allow to sit for ten minutes. Put pectin and 3/4 C water into a sauce pan. Bring to a boil stirring constantly. Boil for one minute. Add mixture to berries and stir for about three minutes until sugar is dissolved. Pour into containers. Allow to sit at room temperature for 24 hours. Keeps in the refrigerator for about three weeks or up to a year in the freezer.
I don't have freezer boxes. I freeze most things in bags. I've used freezer bags for freezer jam before. What a mess! This time I used recycled cottage cheese containers. Now does that surprise you?

Great post! I've never made my own jam, but this sounds like a great one to try. Maybe a future MIFS??? :o)
That looks so so so very good... I really want some.. I am going to go look around and see if we still have any left (we had to clear land and my husband, which I could kill..took most of ours out..)

Do you have any recommendations for what to do with lots of extra canteloupe? We're hoping for a bumper crop this year--the vines are looking so good! I know we won't eat it all and I really don't want to give it all away. Can we freeze cut pieces to make something with later? Thanks!!

I haven't grown cantaloupe in years! You could probably easily give it away or maybe even sell a few. As for preserving. . . my canning cookbook has a recipe for cantaloupe pickles. Another cookbook has a recipe for preserves with lemon, ginger and cinnamon that sounds wonderful! Let me know I can email the recipes if you are interested. And according to the cookbook, you can freeze in balls or cubes with sugar.
Anyone else have ideas?
How lucky you are to have blackberries!! Where we live it's much too hot for them. I miss making jam and preserves each year (when we lived in Idaho). Have a wonderful day.
I'd love the recipe for the preserves! I wonder how it comes out when you freeze it and then thaw--too watery? I guess we could make smoothies then.

correction -
I went to buy the Sure-Jell and it costs $2.49! A jar of blackberry jelly - without seeds - was only $2.19. So I bought Jeff the jelly he's been wanting and I'll use my blackberries for... I don't know what but something that doesn't need Sure-Jell. ;)
