Homemade Sloppy Joes

This is another recipe that after making from scratch, I wondered why I ever bought a mix. It is so easy, practically as quick as buying the mix, and tastes so much better.

1/2 C minced onion
1/2 C chopped green pepper
2 TB butter
1 1/2 pounds ground beef
1/2 C mushrooms (can omit if fungus isn't your thing!)
2-4 TB catsup
salt and chili powder to taste

Melt the butter in a large skillet. Saute onion and green pepper until tender. Add the meat and brown. Drain the grease. Add mushrooms, ketchup and seasoning. Cook uncovered, for five minutes. Serve on buns.
What do you eat on your sloppy joes? Around here, when sloppy joes are on the menu, we usually offer the following fixings: coleslaw, pickles, sliced cheese, and potato chips. It seems to be the West Virginia way to serve coleslaw on all kinds of sandwiches. It is a tradition we have quickly adopted.

Next time you are fixing sloppy joes, try making them from scratch. I bet you'll find, as I did, they are too easy not to make homemade!

Yum. One thing that I like to add to my sloppy joes-believe it or not-is a little bit of sweet relish. It just gives it a bit of a different flavor so it doesn't taste the same as my spaghetti sauce etc.
