Homemade Cornbread
Corn bread is one of those things I always bought a mix for. Then I made it once and realized, it is so easy. Finding a good cornbread recipe isn't as easy though. I tried several before getting one that I really liked.
Apparently, Molly at Cuppa, Cuppa, Cuppa, is having the same problem. She asked for someone to share a good recipe, so here it is:
Corn BreadThe only thing I do differently is I bake it in a cast iron skillet. I make a double batch and bake it in a 10 inch skillet. It still bakes in about 30 minutes. The cast iron gives it a nice crust! Yum! Any leftovers I save for cornbread stuffing. Hope this one works for you Molly!
1 1/4 C flour
3/4 corn meal
4 TB sugar
3 tsp. baking powder
1 tsp. salt
1 C milk
1 egg, beaten
3 TB butter, melted
Sift the dry ingredients. Add milk, egg and butter. Beat well and bake in an 8 inch greased pan in a hot oven, 400 F, 30 - 40 minutes.

I hope you had fun in NC. My family and I have been going to the Outer Banks for 20+ years now. First it was me and my parents, now it is me, my husband, and my parents, and some day me, my husband, our children and my parents. :)

I LOVE CORNBREAD!!! With a PASSION!!! I'll have to try this recipe. You know, if you save bacon drippings, they're really good to grease the cast iron skillet with...DOUBLE YUM!!!!
This and everything that she posts on here is absolutley perfect. This corn bread is no exception. Once you make it, you won't make it any different. I even have made it once, so you know it is not hard.
I love cornbread and usually brush it with melted butter mixed with a little sugar after it bakes. I am definitly making some this week!
Cornbread should only be made in a cast iron sillet! I plan on going to the cornbread festival next weekend!
