Home-made Buttermilk Pancakes
Our Saturday Morning Tradition.
My kids love pancakes. No, they really love pancakes. They ask for them for lunch. They ask for them for dinner. I think they would eat them every day, and not be tired of them. They don't get them that often. We do sometimes have pancakes other days, but Saturdays are when they can count on them.
We use several different recipes, depending on the mood. Our choice, most days is Buttermilk Pancakes, from scratch. A triple batch is about right for our family of six.
Buttermilk Pancakes
1 C flour
1 tsp baking powder
1/2 tsp soda
1/2 tsp salt
1 C buttermilk (I use powdered)
1 TB margarine, melted
1 egg
Mix dry ingredients. Beat egg, and add milk and melted margarine. Add the wet mixture to the dry, and stir until smooth. Cook on a hot griddle or pan.
Something I've been wanting to try is making my own mix from this recipe. I already use the dry buttermilk, so it really would be a simple task. Mixing it up every time is easy, but it would be a small time saver (and every time saver is valuable!) if I had the dry ingredients ready to go. Then I would get the taste of home-made with the convenience of a mix.

Wow, these sound good! Any chance you also have a waffle recipe? My waffle iron is getting lonely stuck in the closet...mostly because I haven't been satisfied with any recipes I've tried.
Jarrett loves pancakes too! He eats the frozen ones almost everyday. On Sundays I make them but from a mix. I'm not one for making things from scratch unless it's dessert.

I have lots of waffle recipes, but no waffle iron! :( I'm not sure what I'd recommend though, since it has been so long since I made waffles.
Anyone else have a good one for her?
Yum! My daughter loves pancakes as well. My hubby, when he's around, is the pancake maker in our home. He usually makes lots of extra, so we can have them later. They freeze well too!
For waffles, I usually just use the pancake mix, but add a little less water/milk so it is a little thicker.

That recipe looks almost as easy as the "just add water" mix that I use. I may have to get some buttermilk (powdered, of course) and give it a try.
Please do try regular liquid buttermilk. If you are unsure, then only by the quart size at first. Since its already curdled it lasts like cheese, it is only bad when it gets moldy and you can scrape that off. The liquid buttermilk makes a big difference in the texture of the batter. I usually have to add extra liquid to thin the batter down.

I know buttermilk is pricier, but it's HUGELY better, IMO. I used to use the powder, too, but I pay for the real thing now. Enjoying your blog!
I have a high protein waffle recipe:
1 c. cottage cheese
3 eggs
1/2 c. flour
1/4 t. salt
1/4 c. oil
1/2 c. milk
1/2 t. vanilla
I've got a whole wheat one too. Maybe I'll post it on my blog.
We love pancakes too...I cook ahead and freeze them.
Don't you need to add water to the mixture? Do you just add the powdered buttermilk as is? I've been wanting to know how to use the powdered buttermilk since I bought. Last time I used it, I tried making biscuits but it came out not tasting well. Had to put jam on top of it just to make it taste better.

Sorry that wasn't clear. 1 Cup Buttermilk (with water added if you use dry.) My powdered buttermilk is 4 TB dry milk & 1 C water = 1 C buttermilk
