Homemade Hot Cocoa

It is unseasonally cold here this morning. And our furnace is not working right. This morning we woke up to a 50 degree house. So, I am thinking warm, comfort foods: Hot Cocoa!
Making your own cocoa is more economical than buying mixes. It is easy and yummy! This recipe is not as sweet as mixes. You may need to adjust for your family's tastes.
2 tsp cocoa
2 scant tsp sugar
1 cup boiling water
1 cup milk
1/2 tsp vanilla
Put the cocoa, sugar and boiling water into a saucepan. Boil 1 minute, add milk and heat. Do not boil. Add vanilla. Makes 2 cups.
You can also make your own chocolate syrup
Both of these recipes come from my favorite cookbook: The Settlement Cookbook. My edition is from 1965. There are many editions older and newer. My mom go this cookbook for a wedding gift. I am not familiar with other editions, but this is a fantastic source for from scratch recipes. It has more than recipes. There are chapters on preserving, nutrition, entertaining, and housekeeping.

2 c sugar
1 qt water
4 ounces unsweetened chocolate
1/2 tsp salt
2 TB cornstarch
2 TB cold water
2 tsp. vanilla
Boil sugar and water 5 minutes; add chocolate, salt and cornstarch dissolved in cold water. Stir until smooth, cook 3 minutes. Cool, add vanilla, store in jar in refrigerator. Use 2 TB to a glass of milk when ready to serve. Makes 4 cups.

There is nothing like homemade hot cocoa on a cold morning! I have wonderful memories of my Great Grandmother making it in the mornings when I was little girl.
She would put what was left over in the fridge for later when I could have it cold as a snack!

Local store had a sale on family size instant packs with mini marshmellows. I stocked up. $1.00 USD a box. Normlly we make our own, but hey, sometimes I don't feel like it. ~grin~
At that price I would buy the mix too!
I have been looking for a low sugar or sugar free recipe for hot cocoa and chocolate milk. I substituted the sugar for Stevia which can be used in a 1/1 ratio to sugar. Other sweeteners are chemically processed so I only use Stevia or Truvia. Thanks for a delicious recipe.
