Still Stretching - Chicken Stir Fried Rice

Still counting the meals I can make from one whole chicken. Yesterday, I made Chicken Stir Fried Rice. If you have been reading you have probably guessed by now that I don't have a set recipe for this. In college my room mates called me the casserole queen. I could make a casserole out of whatever odds and ends could be found in the cupboards. C'mon tell me the rest of you cook like this?

This how I made it.

Heated a few TB of oil in a pan. Sauteed three cloves of chopped garlic. Added julienned onions. Then whatever chopped veggies I had. We had a Marshall (green and white) stir fry. I had green peppers, snow peas, broccoli and water chestnuts. I added some peanuts too, then some chicken and teriyaki sauce and a pinch of crushed red pepper. Finally, some leftover rice. Stir fried it until the veggies were slightly tender. We ate it all.

Meal count = 4 and there is still more.

Yum. I love fried rice to use up all those "bits" in the fridge. It is totally a clean out the veggie drawer meal!
